
Crackers have been part of Italian cuisine for centuries. In ancient times, sailors relied on them as they would stay fresh for a long time – ideal for someone away for months at sea. More recently, crackers have become synonymous with merenda (snack time) in Italy. This recipe is a far cry from the industrialized, square crackers you may be familiar with as it requires you to roll each cracker out by hand. Enjoy each fun, unique shape!

Ingredients:
1 Cup All Purpose Flour
1/2 tsp Baking Powder
2/3 Cup of Water
1 tbsp Classico Extra Virgin Olive Oil (plus extra for brushing)
1/4 tsp Salt (plus extra for topping)
1/4 tsp Ground Black Pepper
Directions:
1. Mix all the ingredients together and begin kneading until you achieve a smooth and compact dough. Cover in cling film and rest in the fridge for 1 hour.
2. Preheat the oven to 428°F (220°C). Remove the dough from the fridge and roll it out into a thin roll. Cut the dough into thumb size pieces and roll each one out, paper thin.
3. Place the thin dough on baking parchment. Brush each cracker with a generous amount of extra virgin olive oil and a pinch of salt.
4. Bake for 6 minutes, or until golden and crispy.
