Crackers have been part of Italian cuisine for centuries. In ancient times, sailors relied on them as they would stay fresh for a long time – ideal for someone away for months at sea.
More recently, crackers have become synonymous with merenda (snack time) in Italy. This recipe is a far cry from the industrialized, square crackers you may be familiar with as it requires you to roll each cracker out by hand.
1. Mix all the ingredients together and begin kneading until you achieve a smooth and compact dough. Cover in cling film and rest in the fridge for 1 hour.
2. Preheat the oven to 428°F (220°C). Remove the dough from the fridge and roll it out into a thin roll. Cut the dough into thumb size pieces and roll each one out, paper thin.
3. Place the thin dough on baking parchment. Brush each cracker with a generous amount of extra virgin olive oil and a pinch of salt.
4. Bake for 6 minutes, or until golden and crispy.
