What is EVOO?

Olive oil is classified in several retail grades: "Extra Virgin Olive Oil" (EVOO), "virgin olive oil", "pure olive oil", "olive oil", "pomace olive oil", "lampante olive oil", "refined olive oil". EVOO is the highest possible grade of olive oil. According to the International Olive Oil Council, the most important international organization to set olive oil standards, to be “extra virgin” an olive oil must derive 100% from olives, must have no more than 0.8% acidity, and must have no defects.

What are the differences between the Classico and Riserva Olive Oils?

The key difference between our Classico and Riserva olive oils centers on when the olives were picked and pressed.

Our Classico EVOO comes from olives of the Leccino variety. We harvest the olives in November, when they have reached peak ripeness, and then press them within twenty-four hours. In this way, none of the oil's antioxidants, vitamins, and other unique properties are lost. And thanks to the “cold pressing” production process, the acidity level is maintained between 0.6 and 0.8%, ensuring a smooth profile and texture.

While our Classico EVOO is picked and pressed in November, the Riserva is harvested in early to mid October and pressed within twenty-four hours of harvesting.

What does it mean? A quality EVOO is usually milled within 24/36 hours of harvesting. By pressing our Riserva olives within twenty-four hours, we are able to preserve the olives from natural oxidation and fermentation. And by harvesting our Riserva olives earlier in the season, the olives concentration of of polyphenols and chlorophyll are at their height, instead of lost as olives reach their peak of ripeness.

As the olives have not reached peak ripeness, we are able to extract significantly less oil, leading to a limited release of our Riserva each season.

The result of this harvesting and pressing process is an oil with an intense green color that releases a unique harmony of flavors and aromas. Unlike other extra virgin olive oils, Riserva embodies a complexity on the palate to be savored: pungent, refined and pleasant.

Flavor differences between the Classico and Riserva EVOO:

Classico Flavor Notes: Smooth, floral, with undertones of apple & artichoke. Your go-to olive oil for salads, fish, daily cooking & hors d'oeuvres.

Riserva Flavor Notes: bright, herbaceous, spicy, with undertones of walnut. Perfect for bruschetta, soups, and red meat. When you're looking to create a dish with more indulgent, bold flavors, the Riserva is the olive oil for you!
