What makes extra virgin olive oil rich in antioxidants and nutrients? Polyphenols!
By definition, high-phenolic olive oil contains at least 250mg/kg of polyphenols. Libellula's Classico olives are pressed in November, months earlier than the big distributors. This creates a high-polyphenol count of between 350 to 400 mg/kg.
And just like all our extra virgin olive oil, the Classico is 100% organic, made using regenerative agriculture, harvested by hand, and cold-pressed. The olives are pressed within twenty-four hours, preserving the olives, ensuring none of the olive oil's antioxidants or vitamins are lost.
