Our Classico Extra Virgin Olive Oil comes from olives of the Leccino variety from our autumn 2025 harvest.
We harvest the olives in November, when they have reached peak ripeness, and then press them within 24 hours. In this way, none of the oil's antioxidants, vitamins, and other unique properties are lost.
And thanks to the “cold pressing” production process, the acidity level is maintained between 0.6 and 0.8%, ensuring a smooth profile and texture.
