By pressing our Riserva olives within the hour, we are able to preserve the olives from natural oxidation and fermentation. And by harvesting our Riserva olives earlier in the season, the olives concentration of polyphenols and chlorophyll are at their height, instead of lost as olives reach their peak of ripeness.
